Creamy Coconut Lemon Bars
What you’ll need:
Base:
1 cup of gluten-free oats
1 cup of almond flour
A pinch of salt
2 tbsp of coconut sugar
4 heaped tbsp coconut oil, melted
Filling:
1 cup yoghurt of choice
½ cup lemon juice
¼ cup coconut sugar
½ cup of shredded coconut
*Optional – 30g of vanilla protein
Topping:
1 x 120g tub Goraw Coco Bomb Mousse
For the base, simply mix all ingredients together until smooth, then pop into a lined slice tray and into the freezer while you make the filling. Mix all filling ingredients together well until smooth, then pour over the base. Top your slice with a generous layer of coconut mousse, then either pop in the fridge to set for a few hours, or straight into the freezer. You may also choose to cover the slice in some more desiccated coconut/lemon pieces. Enjoy!
